It was great meeting you in person and enjoying that wonderful Whole30-compliant brunch with you. I love that you are viewing it as rehab rather than “kicking your butt” punishment! And the creativity with cooking that you have already embraced! Last night when I got home, after seeing you, after your yummy suggestion, I marinated my chicken overnight in coconut milk and Penzeys Ozark seasoning mix. Dinner (and leftovers this week) are going to be MARVELOUS!

Hang in there! There are bound to be some tough moments, but you got this!!!!

I’m also a volume eater so I’ve increased my vegetables madly. In the morning, I eat either very high fiber five-grain hot cereal or egg whites scrambled with veg. Lunch might be a salad with tuna or chick peas. Dinner is a smallish bit of chicken or fish and piles of veg. I’m very into roasted veg these days so it could be two or three of the following: brussels sprouts, broccoli, onion or shallot, summer squash (I’m trying cauliflower tonight). For snacks, it might be plain non-fat Greek yogurt (less carbs that regular yogurt) mixed with some blueberries or blackberries. I happen to like Greek yogurt with no sweeteners. I eat some nuts and cook most things with olive oil unless they’re stewed or poached. I occasionally use a little grated cheese – I don’t like the non-fat stuff. And 2% milk with coffee. Pretty much avoiding all white carbs. I sometimes eat a little brown rice or quinoa.

I’ve dropped four pounds over about six weeks, and my blood sugar is normal again. I gave myself a very generous goal of losing 50 lbs by the beginning of summer 2015. That could happen sooner if I actually start exercising. (I’ve joined a gym but haven’t started yet, due to another health issue.)

Losing 36 pounds is great! It’s a pretty amazing start.

And kudos on the reno…I don’t know how to do a single one of those things.
